Picture this, a warm summer’s day, jollof rice, stewed chicken, plantain and coleslaw. In this recipe, I’m going to share my super super simple coleslaw recipe. This is one of those recipes where you either go all out or go home.

I’m guilty for adding enough mayonnaise to this recipe. You don’t have to if you’re calorie counting. Substitue full fat mayonnaise with greek yoghurt or sour cream. Why don’t you try it and let me know what you think?

Coleslaw Ingredients

Main Ingredients
  • 150ml mayonnaise (alternatively use sour cream or greek yoghurt) , washed.
  • 1/2 white cabbage, washed.
  • 5 peeled carrots, grated and washed.
Equipment
  • Food processor (optional)

Coleslaw Preparation

  1. Peel your carrots to remove any sand or dirt on the body.
  2. Wash and chop off both ends of your carrots.
  3. Grate to fine with a hand grater. Can use a food processor alternatively.
  4. Chop your cabbage to fine shreds.
  5. Combine in a bowl and add your mayonnaise.

Serving: Best served cool.

💡Using a food processor would cut your prep time by half. As an avid believer in not staying too long in the kitchen. Some of these include: NutriBullet and Ninja 3 in 1 food processor. Other brands include Magimix, Kitchen Aid or Kenwood.
