Yam and Spicy Fried Egg

This is a typical Nigerian kitchen staple for breakfast. Visit the country, stay over at a hotel, guest house or with friends. On any given morning, yam and egg would be on the menu or out of the lips of your host. If you’re looking for a caloric dense meal to start a busy day, yam and egg is a very good option.

Yam and Spicy Fried Egg Ingredients
Ysm Ingredients
- 1l water
- A pinch of salt
- ¾ tuber of yam, peeled, medium sliced and halved.
Spicy Fried Egg Ingredients
- Olive oil
- 6 large eggs
- 1 pinch of salt
- 5g of stock cube
- 3 stems of thyme / coriander
- 2 red lantern peppers
- 1 sliced medium onion
- 2 sliced medium tomatoes
To Serve
3 stems of chopped coriander 🌿 (not compulsory)
Other Recommendations: use sunflower or vegetable oil as an alternative. You can also add sugar to the yam to taste. For the egg, you can alternatively use parsley or basil or dill.
Yam and Spicy Fried Egg Direction





- Add your yam ingredients to one pot. Boil under medium heat for 20 mins. Test your yam is ready by checking with a skewer or fork. It shouldn’t be hard and be mindful that it’s not too soft either. The yam piece should still be intact but cooked through enough to be eaten.
- In a separate bowl, crack your eggs and add your thyme, salt and beef/ vegetable stock cube to it.
- Add olive oil to a pan and add the peppers, onion and tomatoes. Allow to fry for 5 mins. Add your eggs. Stir until you have created curds of egg and no liquid remains.
Serving: Serve immediately. Dish out 3 portions of yam to 2 portions of egg. Sprinkle on your chopped parsley. My usual plate normally contains 2 portions of yam or one portion of egg. I would sprinkle on some grated black pepper, a slice of tomato to top it off ©
