This Italian style spinach, rocket leaves and Greek Feta salad is a beautiful combination of Italian and Greek flavours. It combines the fresh taste of vegetable base, olives, vine tomatoes, olives, oregano and lemon flavoured vinaigrette.
It’s a lovely salad to pair with any margherita pasta, roast chicken, suya beef, breaded tempura chicken or baked cod. You can also pair it with a side of crusty bread.

Italian Hearty with Greek Feta Ingredients

Main Ingredients
- 1 portion of 200g washed and strained spinach
- 1 portion of 200g washed and strained rocket leaves
- 15 washed and halved cherry tomatoes
- 1 portion of black and green olives
- 20g cubed feta cheese
- 20g pomegranate seeds
- 1 tbsp crushed pine nuts
Salad Dressing
- Store bought french or basalmic dressing (2tbsp)
Equipment
- Strainer (not compulsory)




Salad Preparation
- Combine all salad ingredients in a clean bowl.
- Toss together with your wooden spoon / mixer.
- Add the salad dressing and mix again.
- Allow ingredients to marinade for up to 5 minutes and serve.
Serving: plate your salad as a main dish with an accompanying side like roast chicken or fish. Alternatively, eat alone. Can add extra flavour by lightly grating some parmesan over it.

💡Using a food processor would cut your prep time by half. As an avid believer in not staying too long in the kitchen. My go to kitchen aid is the Ninja 3 in 1 food processor. Other brands include Magimix, NutriBullet, Kitchen Aid or Kenwood.
