Imagine a hot summer’s day. Choose from any of the possible scenarios; could it be that you’re working from home and just had lunch?, or finished pruning the garden at mid-day?, or just come back from an intense workout?, or the kids are on holiday and you need to get their tummies full before dinner?, or you’re hosting a lovely summer themed brunch?, picnic in the park?, or are you having a quiet night in on a Friday evening with your spouse or movie night with the girls?!

Whatever the occasion, this recipe has you covered. And the best part is, it’s super simple! I have made it so many times now, I can literally whip a cup up in my sleep. I’m serious 😂. And every time I’ve made it, all I hear are the smacking lips and licked fingers. The oohs and aahs! It’s a definite staple in my home.

I get all my ingredients from the shops, Aldi, Tesco, Sainsbury’s Morrison’s, Farmers Market. Wherever you find fruits, you’re good. And seeing strawberries are in season and more abundant in the UK during the summer, I find that I make this more in the summer months.

Summer Fruits Yoghurt- Ingredients

  • 1 pack of 500g red ruby Strawberries, or any regular. Washed, de-stalked and halved.
  • 1 pack of 250g raspberries, washed.
  • 1 pack of 100g blueberries.
  • 1 kg tub of pure, unflavoured greek yoghurt.
  • 1 tbsp of vanilla flavouring or 1/2 vanilla pod.
  • 2 tbsp of canadian maple syrup.
Additional Ingredients
  • Store bought muesli (mixture of raisins, oats, coconut shavings). can also come with additional dry fruits like raspberries, bananas, apples and strawberries. I would not recommend packs with dry fruits as it waters down the richness of the fresh fruits we’d use to make this compote.

Yoghurt Compote Preparation

We would prepare this compote in a layer by layer process. It’ll take as many layers as your cup, dish or glass container can manage. Use the steps below and enjoy!

  1. Mix the vanilla flavouring into the yoghurt and give it a good stir.
  2. Line the base of your glass with 1 tsp of maple syrup. Swish it round, move on to step 3 for muesli or skip to step 4 without muesli.
  3. Add your muesli (1 tbsp)- skip to step 4 if you prefer not to have muesli.
  4. Add 1 generous tbsp dolop of mixed yoghurt (step 1) next.
  5. Add 2 halves of strawberries, 6 blueberries and 4 raspberries over yoghurt.
  6. Top off with 1 tspn of maple syrup.
  7. Start the process again until your cup or jar conta

Serving: Can be eaten for breakfast, mid-day snack or as desert.

💡Using a food processor would cut your prep time by half. As an avid believer in not staying too long in the kitchen. My go to kitchen aid is the Ninja 3 in 1 food processor. Other brands include Magimix, NutriBullet, Kitchen Aid or Kenwood.
