Grilled BBQ Chicken with suya pepper

I’d like to introduce you to my fail-proof summer bbq chicken recipe. I know you might have a different method, but for me this has been tried and tested in the kitchen, on the grill, with family and guests. Grilled BBQ Chicken & Suya Ingredients
Main Ingredients
- soft chicken thighs (4 pieces)
- 2 stock cubes
- salt
- 5ml of sunflower oil (or other oil of choice with a high smoke point)
- suya pepper
- chilli pepper
- 1 juiced lemon
- 1 freezer bag
To Serve
- 4 pieces of grilled corn
- bbq sauce
Equipment
- bbq grill
- suya pepper
- oven grill (alternatively)
Grilled BBQ Chicken & Suya Directions
- First wash your chicken and make vertical cuts on each piece. these should be deep enough to hold your spices.
- Add all the marinade ingredients (salt, stock cubes, pepper and suya pepper) mentioned above to a blender.
- Blitz until smooth and completely combined.
- Mix your chicken and spices together and transfer to a freezer bag. Add a juice of squeezed lemon. Best left to marinade overnight.
- Prepare your grill and cook for 30-45 minutes. I prefer mine well done (i.e. with no blood left in the meat).

💡Using a food processor would cut your prep time by half. As an avid believer in not staying too long in the kitchen. For this recipe, I used my NutriBullet. I also regularly use my Ninja 3 in 1 food processor. Other brands include Magimix, Kitchen Aid or Kenwood.
