Simple Lasagne

This simple recipe is a classic, a novelty. I take this traditional Italian comfort food and put a little spin on it to make it even more special. It’s so simple, I can make this meal with my eyes closed. Hang on, get ready, let’s go!

Lasagne Ingredients

Main Ingredients

  • Olive oil
  • 12 lasagne sheets
  • 500g of minced meat
  • 1 tspn of fennel seeds
  • 25g of washed spinach
  • ½ a bunch of fresh basil
  • 10g cheddar cheese, grated
  • 2 bulbs of chopped onions
  • 50g Parmesan Cheese Grated

Sauce Ingredients

Other recommendations: for a vegan option, use porcini mushrooms, courgettes, carrots and celery as an alternative to meat.

Lasagne Preparation

  1. Remove the minced meat from the packaging and add to the pan under medium heat. Toss in some olive oil, add the chopped onions. Season with salt and stock cubes to taste. Stir meat on heat for a few minutes until all meat has changed from pink to brown. Once done, add in the tomato sauce, stir and let simmer. 
  1. Line the baking pan/ roasting dish with spritzed oil or olive oil. Now start layering your lasagne in the pan starting with the meat sauce, bechamel, spinach and lasagna sheets. Continue until all has been transferred to the pan.
  1. Once complete, finish the layering with cheddar cheese and cover with foil. Pre-heat the oven to 200˚C/400˚F/6 gas for a few minutes. Place the roasting dish in the oven with the foil covering. Cook for 20-25 mins. Take foil off and switch oven setting to fan for 20 mins. Take lasagna out and sprinkle some more cheddar, return to the oven and let grill for 10 more minutes. Take lasagne out, let settle for 10 minutes before serving.

Serving: Allow to rest and serve with either rocket salad base with grated parmesan or mixed vegetables with salad dressing. My usual plate normally contains a base of rocket salad, lasagna portion and grated parmesan to top it off ©

💡Another tip I like to use is adding cheddar cheese through the layers of my lasagne as I build it. This helps achieve a more indulgent and rich taste when served.
